TURMERIC & GINGER MIX

 Ingredients

1.25 part Fresh Juiced Ginger

2.5 part Lemon Juice

.5 part Lime Juice

.75 part Fresh Juiced Turmeric

 4 part Handmade Simple Syrup

 Method

Combine all ingredients

MINT INFUSED MEZCAL TEQUILA

 Ingredients

Mezcal Tequila

Mint Leaves – Off Stem

 Method

Smack leaves in the palm of your hands or use a muddler to soften the leaves.

Combine the leaves and tequila in a sealed container and leave to infuse for a period of time.

The longer you leave it, the more intense the mix will taste and smell.

SIMPLE SYRUP

 Ingredients

1 part White Sugar 

1 part Hot Water 

 Method

Combine sugar with hot water and stir until dissolved.

Cool and then store in a sealed bottle.

 

LEMON FOAM / CREAM SALT GARNISH

 Ingredients

3 oz Half/Half or whole milk

1 oz Fresh Squeezed Lemon Juice

Pinch of Salt

3 Bar spoons Vanilla Bourbon Paste or Vanilla Extract

 Method

For cream, stir all ingredients to a smooth consistancy.

For foam, combine ingredients and whip using a ISO Cream Whipper

DEMERARA SYRUP

 Ingredients

1 Part Raw Brown Sugar 

1 Part Hot Water Water 

 Method

Combine sugar with hot water and stir until dissolved.

Cool and then store in a sealed bottle.
